No bread Chicken Pizza

2 Chicken Fillets
Tin of tomatoes
1 Red pepper
Fresh basil leaves
1 red onion
Mixed peppers sliced
Cheese
Salt and pepper to season

Preheat the oven to 180 degrees
For the sauce, blend the tin of tomatoes, red pepper, basil leaves and salt and pepper.
Place the chicken fillets between 2 pieces of cling film. With a rolling pin, flatten the chicken fillets slightly so they will cook quicker and more evenly.
In a pan, cook the chicken for a min or 2 on each side.
On a baking tray assemble your chicken pizza. Place the chicken breast first on the tray. Then add a bit of the sauce on top. Place your cut vegetables on top. Then sprinkle the cheese.
Place in the oven for 10-15 mins until the chicken is completely cooked through and the cheese is golden on top.
Serve with some salad or vegetables
