Steak, mixed vegetables and baby potatoes
2 pieces of lean steak
Salt and pepper to season
Coconut oil for cooking
Preheat the oven to 180 degrees.
Make sure the steak is at room temperature before cooking it. Season both sides of the steak with salt and pepper. Leave to one side while you prepare the vegetables and potatoes
Cut the potatoes in half and season with some mixed herbs and toss in a little spray oil. Lay out on a baking tray and cook in the oven until soft on the inside but golden and crispy on the outside.
In a pot, cook off your broccoli and carrots. The beans won’t take as long to cook so you can add these in later.
As everything else is cooking, get your pan for the steak nice and hot. Place a small bit of coconut oil in the pan and place the steaks in it. Cook on the same side for a few minutes, then flip and turn down the heat and cook to your own liking.
Time to plate up.
