Ingredients:
1 Slice of brown bread
1⁄2 an Avocado
1 Egg
1 Tomato
1 Lemon
Salt & Pepper
Method :
Get a pan hot, spray with fry light and cook your egg and tomato until cooked to your preference.
In the meantime, mash half an avocado with a squeeze of lemon juice, salt and pepper.
Lightly toast the brown bread and assemble.
This is a super simple meal you can have at anytime of the day. It contains good quality fats, protein with some veg on the side, feel free to add some more of your favourite vegetables.
