Chicken and chorizo hot pot
4 Chicken Fillets
1 Red onion
Tin of tomatoes
1 clove of garlic
1 Chicken stock cube
1 Red pepper
2 large potatoes
Salt and pepper to season
Cook off your garlic and onions. Cook until soft and golden. Add your cubes of chicken fillets. Add the chorizo.
In a blender, add tin of tomatoes, basil leaves, salt and pepper, and red pepper.
Add some chicken stock and water to the garlic, onion and chicken mix in the pan, allow to come to the boil, then turn down the heat.
Add your blended tomato mix. Cook for another 5-10 mins.
Cut your potatoes into cubes and add to the pot. Cover and simmer on a low heat until the potatoes have cooked through and the chicken is soft.
Optional- You can add spinach to the cooked hot pot for that extra bit of goodness.
Serve with rice
