Avocado Eggs on brown bread
You may recognise this dish from Clonakiltys courtyard bar.
A fantastically filling and nutritious dish but I have made some adjustments to make it more calorie friendly.
Avocado Eggs on brown bread
2 eggs
½ an Avocado
100g of mushrooms
100g of cherry tomatoes
2 thin slices of brown bread (50g each)

Fry the mushrooms and cherry tomatoes in a pan with some 1 cal spray oil, after 5 mins add your eggs to the pan until the eggs are cooked to your liking.
While the eggs are cooking mash up half an Avocado with some parsley, lemon juice, salt and pepper.
Assemble on two thin slices of brown bread.
The reason for the thin slices?, brown bread is typially very calorific.
